Zucchini pistachio salad
Ok, when I first found this recipe, I was like…not another zucchini salad! Then I tried it and I was literally blown away. This is the best way to eat zucchini in my book! But variety is the spice of life, so I keep it I the rotation.
Ingredients
3 medium zucchini, chopped into 1/2” pieces
Pinch of salt
2 Tbsp olive oil
Dressing:
2 Tbsp olive oil
1/2 Tbsp honey
1/4 cup chopped pistachios (I blended them quick)
1/4 cup chopped basil
1 Tbsp of lemon juice
1 clove of garlic grated
1/2 tsp salt
1/2 tsp red pepper flakes
Salad:
2-4 cups of arugula
Instructions
Season zucchini with oil and salt on a plate and set aside. Pat dry after 10-15min
Make the dressing. Add the ingredients up in a bowl and mix
Heat a large skillet to medium/high heat. Add 1 Tbsp of olive oil and add zucchini. Cook until both sides are slightly charred.
Let zucchini cool
Mix it all together and enjoy!
