Zucchini pistachio salad

Ok, when I first found this recipe, I was like…not another zucchini salad! Then I tried it and I was literally blown away. This is the best way to eat zucchini in my book! But variety is the spice of life, so I keep it I the rotation.

Ingredients

  • 3 medium zucchini, chopped into 1/2” pieces

  • Pinch of salt

  • 2 Tbsp olive oil

    Dressing:

  • 2 Tbsp olive oil

  • 1/2 Tbsp honey

  • 1/4 cup chopped pistachios (I blended them quick)

  • 1/4 cup chopped basil

  • 1 Tbsp of lemon juice

  • 1 clove of garlic grated

  • 1/2 tsp salt

  • 1/2 tsp red pepper flakes

    Salad:

  • 2-4 cups of arugula

Instructions

  • Season zucchini with oil and salt on a plate and set aside. Pat dry after 10-15min

  • Make the dressing. Add the ingredients up in a bowl and mix

  • Heat a large skillet to medium/high heat. Add 1 Tbsp of olive oil and add zucchini. Cook until both sides are slightly charred.

  • Let zucchini cool

  • Mix it all together and enjoy!
