Zucchini Fritters
I’ve been making these fritters for almost 20 years. They still hold as one of my best recipes. These fritters are great on their own, added to a meal, or even as an appetizer for a party. Top with hummus, cheese, or anything you like!!
Ingredients
2-3 zucchini shredded and water squeezed out
2 eggs
2 gloves of garlic
1/2 cup of flour
1/2 tsp salt
1/2 tsp pepper
1/4 tsp red pepper flakes
(Optional: chopped basil, onion, or shredded cheese)
Instructions
Heat a pan to medium/high heat and season with olive oil liberally
Spoon the dough on and make circular patties 3” diameter.
Cook until crisp on each side
Top with whatever you want!
